Take 5 Seared Salmon with Creamy Mustard Sauce
Ingredients:
- 4 (5 oz) salmon fillets
- 2 large shallots
- 3 tbsp finely chopped parsley
- ½ cup light sour cream
- ¼ cup grainy Dijon mustard
Directions:
- Pat the salmon dry with paper towels. Season the salmon with salt and pepper.
- Heat a 12- inch greased nonstick skillet on medium-high
- Lay salmon flesh side down in the skillet
- Cook for 4 minutes per side and browned on both sides
- Once cooked, transfer to a large plate.
- Chop the shallots and add into the same skillet cook for 2 minutes on medium stirring often.
- Stir in the sour cream and 2 tbsp water and cook for 30 seconds. Remove from heat and stir in the mustard. Add salt and pepper to taste.
- Spoon sauce over salmon and garnish with parsley.
