Seared Salmon with creamy mustard sauce

Ingredients:

  • 4 (5 oz) salmon fillets
  • 2 large shallots
  • 3 tbsp finely chopped parsley
  • ½ cup light sour cream
  • ¼  cup grainy Dijon mustard

 

Directions:

  1. Pat the salmon dry with paper towels. Season the salmon with salt and pepper.
  2. Heat a 12- inch greased nonstick skillet on medium-high
  3. Lay salmon flesh side down in the skillet
  4. Cook for 4 minutes  per side and browned on both sides
  5. Once cooked, transfer to a large plate.
  6. Chop the shallots and add into the same skillet cook for 2 minutes on medium stirring often.
  7. Stir in the sour cream and 2 tbsp water and cook for 30 seconds. Remove from heat and stir in the mustard. Add salt and pepper to taste. 
  8. Spoon sauce over salmon and garnish with parsley.
